Top sirloin steak can be pan-fried by drying and seasoning the meat, preheating a heavy frying pan, searing both sides, reducing the heat when necessary, and checking the center with a food thermometer. The pan must be hot enough to brown the exterior without burning it before the interior reaches the required temperature.
For reliable results, use steaks of similar thickness and allow enough space between them. Crowding the frying pan reduces surface temperature and causes the meat to steam instead of sear.
Remove the steak from its packaging and pat every surface dry with a clean paper towel. Surface moisture delays browning and increases splashing when the meat enters hot oil.
Trim only excessive exterior fat. A thin fat edge can add flavor during cooking.
Season with salt and black pepper. Garlic powder, paprika, herbs, or a dry steak seasoning may also be used, but mixtures containing sugar can burn at high pan temperatures.
For evenly cooked portions, select steaks approximately 25–40 mm thick. Very thin pieces cook through before a strong crust develops, while very thick steaks may need a lower-temperature finishing stage.

Place the empty pan over medium-high heat. Allow it to preheat gradually rather than immediately using the highest burner setting.
Add a small amount of high-temperature cooking oil and rotate the pan to cover the cooking area. The oil should become fluid and shimmer, but it should not produce heavy smoke.
Use a pan large enough to leave space around each steak. For several portions, cook in batches.
Place the steak in the pan away from your body to reduce oil splashing.
Leave it undisturbed while the first side develops a brown crust.
Turn it using tongs rather than piercing it with a fork.
Sear the second side.
Hold the fat edge against the pan briefly when it needs additional browning.
Reduce the heat if the exterior is darkening too quickly.
Add butter, garlic, and herbs near the end when desired.
Tilt the pan and spoon the melted butter over the steak.
Check the internal temperature at the thickest point.
Transfer the steak to a clean plate and allow it to rest.
Cooking time depends on thickness, starting temperature, burner strength, pan weight, and preferred doneness. Temperature is more reliable than a fixed number of minutes.
For food safety, whole cuts of beef should reach at least 63°C or 145°F and rest for at least three minutes. Mechanically tenderized steak may require different handling and should follow its package directions and local food-safety requirements.
Top sirloin may initially grip a stainless steel surface. Once a proper crust forms, it normally releases more easily.
Sticking is more likely when:
The steak surface is wet
The pan is too cool
The pan is overheated
Insufficient oil is used
The steak is moved too early
Burned residue remains from a previous batch
Do not force the steak away from the pan immediately. Allow more time for browning and test one edge gently with the tongs.
Between batches, remove badly burned residue and restore a clean cooking surface.
After removing the steak, lower the heat and pour away excessive fat while retaining the browned residue.
Add a small quantity of stock, water, or another suitable liquid. Scrape the pan gently with a wooden or silicone utensil as the liquid simmers.
Butter, pepper, herbs, mustard, or cream may be added depending on the recipe. Reduce the sauce only until it reaches the preferred consistency.
Do not use metal tools that can scratch a coated frying pan.
Resting allows the steak temperature and internal juices to settle.
Place it on a clean board for at least three minutes. A thick steak may benefit from a slightly longer rest.
Identify the direction of the muscle fibers and slice across them. Cutting against the grain shortens the fibers and makes top sirloin easier to chew.
Do not return cooked steak to a plate or utensil that held raw meat unless it has been washed.
