Capacity should follow expected demand rather than appearance alone. An oversized pan with a small amount of food can lose visual appeal and may remain in service too long. A pan that is too small requires constant replacement and interrupts the buffet.
The purpose of a chafing dish is only fulfilled when all of its parts fit and operate consistently. A poorly seated water pan may wobble. A loose lid mechanism can interrupt service, while unstable legs create avoidable risk around hot food and water.
